OVERNIGHT OATS W. FIG & GINGER COMPOTE

Ingredients
- Dried figs
- Candied ginger
- Cranberries
- Water
- Oats
Instructions
- Cut up any dried fruit, such as dried figs and candied ginger, and add it to a small saucepan.
- Fill the saucepan with water to cover the fruit by about 1 inch.
- Bring to a boil and cook until the fruit has softened. Transfer the mixture to a glass container or jar and allow it to cool to room temperature.
- The sugars released from the dried fruit will thicken the compote as it cools.
- Refrigerate overnight to use with your overnight oats the next morning!
